Allotment Recipes

We had our first cookery demonstrations at the allotment in July 2021 and they were so well attended we have decided to get some more in the diary AND to put some of the recipes up here so that you can cook along at home.

Chris’ Gazpacho

The recipe is based upon a medium sized glass “jug”.

Ingredients:

3 tomatoes 

1 green pepper 

Half a cucumber 

2 small cloves of garlic (or one large clove)

1 slice of white bread 

Olive oil 

Sherry vinegar

Sea salt

Method:

Peel and chop the tomatoes, garlic and cucumber.

Slice the green pepper removing the seeds.

Put the ingredients into the jug (add ice if you need an instant cold gazpacho)

Soak the bread, squeeze out the water and add to the jug.

Pour in olive oil (around 8 seconds)…

Add a dash of sherry vinegar and a dash of sea salt.

Use a hand blender to mix all the ingredients.

Taste, adding more olive oil, salt or sherry vinegar and blend until you are happy with the taste.

Pop the jug in the refrigerator.

Serve in a small glass adding a couple of drops of olive oil on the top.
